bruschettachicken

Tuesday’s dinner with the girls was delicious this week. I mean, it always is, but now that I can smell and taste again, it seemed particularly enjoyable.

Here are the recipes, so you can be like us. Just don’t make a bunch of whole-grain spaghetti to serve under the chicken and then forget that it is keeping warm in the microwave. Because then you’ll find it the next morning and feel slightly stupid.

Not that I did that.

Anyway, recipes:

Bruschetta Stuffed Chicken

  • 1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
  • 1-1/4 cups  KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
  • 1/4 cup chopped fresh basil
  • 1 pkg.  (6 oz.) STOVE TOP Stuffing Mix for Chicken
  • 8 small boneless skinless chicken breast halves (2 lb.)
  • 1/3 cup  KRAFT Roasted Red Pepper Italian with Parmesan Dressing

1. Heat oven to 350ºF.

2. Mix tomatoes, 1/2 cup cheese and basil in medium bowl. Add stuffing mix; stir just until moistened.

3. Place 2 chicken breasts in large freezer-weight resealable plastic bag. Pound with meat mallet or side of heavy can until chicken is 1/4 inch thick. Remove from bag; place, top-sides down, on cutting board. Repeat with remaining chicken. Spread chicken with stuffing mixture. Starting at 1 narrow end, tightly roll up each breast. Place, seam-sides down, in 13×9-inch baking dish. Drizzle with dressing.

4. Bake 40 min. or until chicken is done. Sprinkle with remaining cheese; bake 5 min. or until melted.

5. Serve as is or on a bed of whole-grain pasta that you put in the microwave to stay warm. Don’t forget about it.

6. Eat and eat.

And here is Abbie’s delightful Girlfriend Salad:

  • 1 C dried cherries/craisins/whathaveyou
  • 5 C spinach or whatever lettuce you love
  • 1/2 red onion, thinly sliced
  • 1 C feta cheese, crumbled or cubed
  • 1 C toasted pecans

Dressing (to be chilled before tossing):

  • 5 T sugar
  • 3 T red wine vinegar
  • 1/2 C oil
  • 1 tsp minced onion
  • 1/2 tsp salt
  • 1/4 tsp dry mustard
  • juice of 1/2 orange

    i was wondering what happened to that spaghetti after i left–i seemed to remember you boiling the water but then there were no noodles…ha! ;) oh wells, obviously we aren’t lacking for carbs.
